How to make Almond - Badam Kheer
Ingredients for Badam Kheer to serve 4
- Badam/Almonds - 1 cup
- sugar - 1 cup - more or less according to taste.
- saffron - few strands
- cardamom powder - 1/2 teaspoon
- water - 1/2 cupGhee - 1 tablespoon
- Milk - 1 liter
Preparation
- Soak almonds in water for about 1 hour.
- Peel almonds and grind them to paste using the water. Do not add any extra water.
Cooking Method
- Heat ghee in a thick bottomed pan.
- Add almond paste and fry on low flame for 4-5 minutes stirring all the while.
- Add sugar. Mix well and cook for 5 minutes.
- Add milk and boil for 15 minutes.Take off the flame.
- Add cardamom powder and saffron strands. Stir to mix. It will enhance flavor and color too.
Serve hot or at room temperature or chilled after keeping in the fridge for a few hours.
Enjoy this in the hot summer afternoons as a cool snack or as a desert.
Tips
You may soak almonds longer.
I do not always peel almonds.
You may add some chopped cashew nuts and pista to the final dish along with cardamom powder.
Badam kheer keeps in the fridge for 4-5 days. So you can make it in advance for a party or picnic.
